I've been thinking of making one of these ever since you posted the recipe some months ago. I still can't figure out exactly how one braids the bread dough when there are only two pieces instead of three, given that there are only two sides to the rectangle... maybe I'll just have to do it to understand?

So, it isn't really braiding it. Just crossing the sides over each other. It's just called a braid. I'm not exactly sure why.
